L'Instant T is a unique culinary experience in Toulouse. Winner of the Vanel d'Or 2018, Rajesh Codandabany and his team enhance local produce and simple, high-quality ingredients to serve you refined dishes with unexpected flavors. The Chef and his team offer a menu that changes every three weeks, aligned with seasonal produce and tastes. The meats, vegetables, fruits, and the daily catch are sourced locally, guaranteeing even more freshness. The main dining room is meticulously decorated with a few inspired touches recalling the proximity of the Cité de l'Espace. With enveloping lighting and constellations of planet-shaped plates on the walls, L'Instant T sets the tone and invites its guests to a change of scenery. Where experience and passion meet

Singular and unique, the story of our young Chef is a true source of inspiration.

Rajesh’s passion for cooking was awakened during his teenage years, when he first discovered French gastronomy in the tricolor restaurants of Pondicherry. This culinary love affair was a revelation and marked the beginning of a new adventure. At the age of 15, he left his native country for France, beginning his training that would lead him to work alongside three-Michelin-starred Chef Yannick Alléno at Le 1947, Cheval Blanc in Courchevel, and later in Toulouse at Le Cénacle, awarded one Michelin star.

After gaining solid technical expertise and experience, this passionate chef sought new challenges within Toulouse’s gastronomic brasseries. He joined L’Instant T as sous-chef in 2022, before becoming Head Chef just one year later.

His dedication to cooking knows no bounds — the pursuit of flavor drives each of his creations. Infusing, smoking, experimenting: for Rajesh, the goal is to leave a bold and memorable taste impression on every palate. A vision of cuisine he shares with his brigade, where every member is committed to creativity and the culinary experience.

With a wealth of experience in very good establishments in Toulouse and its surroundings, the Instant T brigade has been able to satisfy its customers by adhering to the values of the establishment. Today, a team cohesion is felt in their dishes of perfection, the restaurant's suggestions are established within the brigade where everyone has their say.
